Southern style fried salmon patties: Here’s a fish that even kids will love to eat. Simple, quick, easy to make, and even better between two slices of bread or in a bun. Add a little mayonnaise or make your own special sauce and you’ll have dinner on the table in no time.
We didn’t eat a lot of salmon patties when I was growing up, but I’ve always enjoyed the taste. Of course, I love just about anything I can squeeze between two slices of sandwich bread. I’m totally addicted to sandwiches of all kinds, always have been.
As an adult, I’ve learned to enjoy salmon in many different ways. I like it baked, pan-fried or, my favorite, smoked on the grill. The price of the fish is a bit steep, but I enjoy it whenever I can.
What’s really nice about these salmon patties is that they are quick and easy to make. I use canned salmon and ingredients that are staples in any kitchen. I try to keep a can or two in the kitchen cupboards at all times. Just mix everything together in a bowl and fry them in a pan. You can prepare the mixture and refrigerate it for several hours before cooking if necessary. This is a great main meat dish or a quick and easy sandwich, whichever you prefer. Ingredients:
1 – 12 oz can pink salmon
2 whole eggs
1/4 cup chopped onions
1/4 cup chopped peppers
2 tablespoons yellow cornmeal
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon Texas Pete’s hot sauce
1/2 teaspoon ground black pepper
1 slice of white bread, crumbled
1/4 cup flour, add slowly, if necessary, to adjust consistency.
