FOOD HAS SUCH RICH CULTURAL HISTORY

For as long as I can remember, there isn’t a memory that’s not centered around family gatherings and food. It’s namely the one tradition that’s lasted since our arrival in America. Food has been the bind for black families, in adversity and in celebration, the tradition markedly rings loud!

WHY THIS RECIPE WORKS

Frankly, I don’t see the point in putting a basic frozen shrimp on an egg and calling it a day. Bland on bland. Instead, a Cajun seasoned shrimp that is perfectly cooked and then chilled looks vibrant sitting on top of our eggs.

WHAT TO SERVE WITH DEVILED EGGS

Deviled eggs are classic finger food. You can pair deviled eggs with traditional apps like our gluten-free pigs in a blanket and our spiced chicken wings.

Or with newer modern recipes like our bacon-wrapped brussels sprouts and our beet and goat cheese bites. All of these are crowd favorites!

CAN YOU MAKE CAJUN SHRIMP DEVILED EGGS?

Hard-boiled eggs can be made up to a week in advance and stored in the fridge, unpeeled.

The deviled egg filling can also be made ahead of time and stored in the fridge for up to two days. Just cook the shrimp and assemble it shortly before serving.

HOW TO STORE CAJUN SHRIMP DEVILED EGGS

If you have leftover deviled eggs, place them in an airtight container and store them in the fridge. They will last for up to three days.

CAN I USE OLD BAY SEASONING INSTEAD OF CAJUN SEASONING?

While Old Bay has a delicious flavor, it is decidedly New England in flavor with a heavy celery salt-forward component. Cajun seasonings, whether homemade or store-bought, have more spice and are intensely flavored with smoked paprika, dried herbs, and plenty of garlic and onion You can substitute but it will be a very different recipe.

HOW LONG DO DEVILED EGGS LAST IN THE FRIDGE?

Deviled eggs last up to 4 days in the fridge. When serving with additional items like shrimp or crab they will last 2 to 3 days.

TIPS AND NOTES :

  • For the best flavor, use fresh eggs that are a week old. If you purchased directly from the grocery store, they are already aged perfectly.
  • If you don’t have a piping bag, you can spoon the mixture into the egg whites.
  • To make boiled eggs easier to peel, add a teaspoon of baking soda to the water.
  • Allow the filling to rest for 30 minutes in the fridge before topping it with the shrimp.
  • Make a few extra shrimp so you can test them for doneness.

Ingredients:

9 hard-boiled eggs, peeled

1/3 cup mayonnaise

1/3 cup sweet relish

2 teaspoons yellow mustard

1/4 teaspoon kosher salt, plus more to taste

Smoked paprika, for sprinkling

18 medium shrimp, peeled and deveined

2 tablespoons unsalted butter

2 teaspoons Cajun or Creole seasoning, such as Tony Chachere’s

(note that some brands of seasoning contain more salt than others)

Instructions:

Cut each egg in half lengthwise. Remove the yolks and transfer them to a medium bowl. Place the egg whites on a serving platter and set them aside.

Mash the yolks with a fork. Stir in the mayonnaise, relish, mustard, salt, and pepper. Scoop an equal amount into each egg white half with a small spoon. Sprinkle smoked paprika on top of each deviled egg.

Cover and refrigerate while you prepare the shrimp.

Give the shrimp a quick rinse in a colander under running water, then drain. Pat the shrimp dry with a paper towel, then transfer to another medium bowl. Sprinkle with the Cajun seasoning and toss to coat.

Melt the butter in a large nonstick skillet over medium heat until the butter starts to shimmer. Swirl the butter around so that it coats the bottom of the skillet evenly.

Add the shrimp in a single layer and cook for 45 seconds. Flip and cook until the shrimp are pink and cooked through, 45 to 60 seconds. Remove the shrimp from the heat and set it aside.

When ready to serve, top each deviled egg with 1 shrimp.
