McDonald’s-style breakfast burritos

Instructions:

  1. Cook the Sausage:
    • In a skillet over medium heat, cook the sausage until it’s browned and fully cooked, breaking it apart into crumbles as it cooks. Drain any excess grease.
  2. Scramble the Eggs:
    • In a bowl, whisk the 7 eggs until well beaten.
  3. Prepare the Eggs with Rotel:
    • In a separate skillet, add the Rotel (diced tomatoes and green chilies) and heat them briefly. Then, pour in the beaten eggs. Cook and scramble the eggs with the Rotel until they are fully cooked and no longer runny.
  4. Assemble the Burritos:
    • Lay out your tortillas on a clean, flat surface.
    • Spoon a portion of the cooked sausage onto each tortilla.
    • Top the sausage with a portion of the scrambled eggs and Rotel mixture.
    • Sprinkle shredded cheese over the eggs while they are still warm. You can adjust the amount of cheese to your taste.
  5. Optional Additions:
    • If desired, add hashbrowns to each burrito for extra texture and flavor.
    • For a different variation, you can also add sausage gravy to your burritos.
  6. Roll Up the Burritos:
    • Fold in the sides of each tortilla and then roll it up tightly, creating a burrito shape.
  7. Serve or Freeze:
    • Serve the breakfast burritos immediately while they are warm.
    • If you want to freeze them for later, wrap each burrito individually in plastic wrap or aluminum foil. Place the wrapped burritos in a freezer-safe container or bag.
  8. Reheat (if frozen):

    • To reheat frozen burritos, remove the wrapping and place them on a microwave-safe plate.
    • Microwave for 1-2 minutes, or until heated through.
    • For extra crispiness, you can air fry them for a few minutes after microwaving.
