THE INGREDIENTS LIST:
Boneless skinless chicken breasts; I used 4.
Salt and ground pepper.
1 Cup.Of pesto sauce.
2 large tomatoes; sliced into 8 slices.
1 Cup.Of shredded mozzarella cheese.
Fresh basil, and balsamic glaze for garnish.
PREPARATION:
1st Step
To start, prepare your oven by heating it to 375 degrees F.
2nd Step
On both sides of the chicken breasts, generously sprinkle them with salt and ground black pepper. Place the chicken, breast side up, in a baking dish about 9 inches by 13 inches.
3rd Step
On each chicken breast, put 2 teaspoons of pesto sauce, and then distribute the sauce evenly all over the chicken. After turning the chicken over, put the pesto that is left over on each breast in an equal layer.
4th Step
Bake the chicken for 25 minutes, or until it is completely cooked through. Take the baking dish out of the oven and do it with caution. On top of each chicken breast, arrange two pieces of tomato. Add a quarter of a cup of mozzarella cheese to each chicken breast.
5th Step
Place the baking dish back in the oven and continue baking for an additional 5 minutes, or until the cheese is melted and stringy.
6th Step
Take it out of the oven and top it with some chopped fresh basil. You may serve this dish with spaghetti or a fresh salad. Before we dig in, we like to give the chicken a finishing touch with a balsamic glaze.
