Honey Mustard Pork Chops Skillet

Instructions:

  1. Prep the Pork Chops:
    • Season the pork chops with salt, pepper, garlic powder, onion powder, dried oregano, and paprika on both sides. Set them aside to marinate while you prepare the potatoes.
  2. Cook the Potatoes:
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the baby yellow potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and fork-tender. Remove the potatoes from the skillet and set them aside.
  3. Sear the Pork Chops:
    • In the same skillet, add the remaining 2 tablespoons of olive oil. Place the seasoned pork chops in the skillet and cook for about 3-4 minutes per side, or until they are nicely seared and cooked through. The internal temperature of the pork should reach 145°F (63°C).
  4. Make the Honey Mustard Sauce:
    • While the pork chops are cooking, whisk together the honey, coarse Dijon mustard, and chicken broth in a separate bowl until well combined.
  5. Combine and Simmer:
    • Once the pork chops are seared and cooked, pour the honey mustard sauce over them in the skillet.
    • Return the cooked potatoes to the skillet as well.
  6. Simmer and Glaze:
    • Reduce the heat to low and let everything simmer for about 3-5 minutes, or until the sauce thickens slightly and coats the pork chops and potatoes. Be sure to turn the pork chops a couple of times to coat them evenly with the sauce.
  7. Serve:
    • Once the sauce is thickened to your liking and everything is heated through, remove the skillet from heat.
