Shrimp & Broccoli Alfredo

Ingredients:

  • 1 pound uncooked shrimp, peeled and deveined
  • 1 pound broccoli florets
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces fettuccine noodles, cooked according to package instructions

Instructions:

  1. Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until tender. Remove the broccoli from the pot with a slotted spoon and set aside.
  2. Add the shrimp to the boiling water and cook for 2-3 minutes, or until pink and opaque. Remove the shrimp from the pot with a slotted spoon and set aside.
  3. In a large saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute, or until fragrant.
  4. Add the heavy cream, Parmesan cheese, salt, black pepper, and red pepper flakes (if using) to the saucepan. Stir until the cheese is melted and the sauce is smooth.
  5. Add the cooked fettuccine noodles, broccoli, and shrimp to the saucepan. Toss to coat the noodles and vegetables in the Alfredo sauce.
  6. Serve the Shrimp & Broccoli Alfredo hot, garnished with additional Parmesan cheese if desired. Enjoy!
