Tater Tot Casserole with Cheese and Ground Beef

**Ingredients:**

– 1 bag of tater tots
– 1 block of Velveeta cheese (or any preferred cheese)
– 1 lb of ground beef
– 1 can of Rotel (diced tomatoes and green chilies)
– Cooking spray or oil for greasing the baking sheet

**Instructions:**

1. Preheat your oven to 425°F (218°C).

2. In a skillet, cook the ground beef over medium-high heat until it’s browned and fully cooked. Make sure to break it up into smaller pieces as it cooks. Drain off any excess fat.

3. Add the can of Rotel (diced tomatoes and green chilies) to the skillet with the cooked ground beef. Stir well and let the mixture simmer for a few minutes to combine the flavors. If you prefer a milder dish, you can use a can of diced tomatoes without chilies.

4. While the beef and Rotel mixture is simmering, spread the tater tots in a single layer on a greased baking sheet.

5. Slice the block of Velveeta cheese (or any preferred cheese) into thin pieces.

6. Arrange the cheese slices evenly over the tater tots.

7. Once the ground beef and Rotel mixture is ready, pour it evenly over the cheese and tater tots.

8. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the tater tots are crispy and golden brown.

9. Remove the Tater Tot Casserole from the oven and let it cool slightly before serving.

10. Dish it up and enjoy your easy and affordable meal!
