Instructions:
1. In a large, heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium-high heat.
2. Add the beef chunks to the pot in batches and brown them on all sides. Remove the browned beef from the pot and set it aside.
3. In the same pot, add the chopped onions and sauté until they become translucent.
4. Stir in the minced garlic, Hungarian sweet paprika, smoked paprika (if using), and caraway seeds (if using). Cook for a minute or two to release the flavors and aromas of the spices.
5. Add the tomato paste to the pot and mix it well with the onions and spices.
6. Return the browned beef to the pot, along with any juices that may have accumulated.
7. Pour in the diced tomatoes and beef broth, and bring the mixture to a simmer.
8. Reduce the heat to low, cover the pot, and let the goulash simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.
9. Add the sliced carrots, diced potatoes, and diced bell peppers to the pot. Simmer for an additional 20-25 minutes, or until the vegetables are tender.
10. Stir in the uncooked macaroni pasta. Continue to simmer for about 10-12 minutes, or until the pasta is cooked to your desired tenderness.
11. Season the goulash with salt and black pepper to taste.
12. Optional: Garnish each serving of goulash with a dollop of sour cream and a sprinkle of chopped fresh parsley.
