Ingredients:
Inside the Tortilla:
- 4 chicken breasts (boiled and shredded)
- 1 block of softened cream cheese
- Half a pack of taco seasoning
- 2 cups of white shredded cheddar cheese (plus a little bit of fiesta blend cheese)
- Few dashes of garlic powder
For the Topping:
- 3 tablespoons of butter (melted in a pan)
- 3 tablespoons of flour
- The other half of taco seasoning
- 1 can of chicken broth
- 2 cups of white shredded cheddar cheese
- 2 decent size spoonfuls of sour cream
Additional:
- Cooking spray
- Soft tortillas
- Gordo’s cheese dip (for serving)
Instructions:
- Preheat the oven to 350°F.
- Prepare the Filling:
- Boil and shred the chicken breasts.
- In a mixing bowl, combine shredded chicken, softened cream cheese, half a pack of taco seasoning, white shredded cheddar cheese, fiesta blend cheese, and a few dashes of garlic powder. Mix well.
- Assemble the Enchiladas:
