White Chicken Enchiladas recipe

Ingredients:

Inside the Tortilla:

  • 4 chicken breasts (boiled and shredded)
  • 1 block of softened cream cheese
  • Half a pack of taco seasoning
  • 2 cups of white shredded cheddar cheese (plus a little bit of fiesta blend cheese)
  • Few dashes of garlic powder

For the Topping:

  • 3 tablespoons of butter (melted in a pan)
  • 3 tablespoons of flour
  • The other half of taco seasoning
  • 1 can of chicken broth
  • 2 cups of white shredded cheddar cheese
  • 2 decent size spoonfuls of sour cream

Additional:

  • Cooking spray
  • Soft tortillas
  • Gordo’s cheese dip (for serving)

Instructions:

  1. Preheat the oven to 350°F.
  2. Prepare the Filling:
    • Boil and shred the chicken breasts.
    • In a mixing bowl, combine shredded chicken, softened cream cheese, half a pack of taco seasoning, white shredded cheddar cheese, fiesta blend cheese, and a few dashes of garlic powder. Mix well.
  3. Assemble the Enchiladas:
    • Spoon the chicken mixture onto soft tortillas and roll them like burritos. Place them in a prepared baking dish.
  4. Prepare the Topping:
    • In a pan on the stovetop, melt 3 tablespoons of butter.
    • Whisk in 3 tablespoons of flour and the other half of the taco seasoning.
    • Gradually add chicken broth, white shredded cheddar cheese, and sour cream. Whisk continuously until the cheese is melted and the mixture is smooth.
  5. Bake:
    • Spray a pan with cooking spray and place the rolled tortillas in it.
    • Pour the prepared topping over the enchiladas.
    • Bake in the preheated oven until golden brown.
  6. Serve:
    • Once plated, add a dollop of Gordo’s cheese dip for an extra cheesy kick.
